介个是配料,姜切片,比较大的蒜从中间切开就行,朝天椒切段。

鸭子氽水后过凉水沥一下,锅内不放油下锅,炒干水气。

鸭子有出一点出油时放一丁点油下去,麻鸭的脂肪很少,放点油才煎得出油来。

放入生姜,蒜仔,两个八角,一小块桂皮,剁辣椒,碗豆酱,冰糖。生抽,老抽。

继续炒均匀,冰糖化掉,调料粘在每一块鸭肉上。

一厅500ML的青岛啤酒,(平时用的是便宜滴HOHO,这是啤酒节送的,8要银子滴烧滴菜比较好吃。)

不要盖锅盖,让酒气煮开带走臊味,大概五分钟后加入适量的盐,转入高压锅内,压了七分钟的样子,太烂就不好吃了。

压后的鸭子又倒在炒锅里,收汤。
