皮先捏成碗装,放进五仁球,用虎口慢慢往上推直至合口,皮延展性很好,哪个地方厚薄不均,可以用手指轻轻推匀。用毛刷沾些手粉,涂在花片上防粘(一点就好),把饼球放进模具里,轻轻压实后脱模

全部饼胚压好后,喷水,放进已预热的烤箱中下层(长帝、倒数第二层),200度烤5分钟后取出

刷蛋液,每个饼面薄薄涂一层就行,再放进烤箱,170度烤15分钟,如果时间到了上色尚浅,可以把烤盘往上移一层,关掉下管再烤2分钟
