花生凉下来后扒皮,这是个功夫活,要有点耐心的,扒皮后的花生沥水装保鲜袋冷冻一天一夜

冷冻好的花生取出,和冷油一起下锅,小火炸花生,铲子不断搅动,当花生颜色发白,调到中火,稍微有点噼啪声,因为没有皮,声音很轻微的,这时候调大火炸一分钟关火,预热再炸一分钟捞出

锅中的油全部倒出,不洗锅,放花椒小火煸香,再放辣椒
